水席因何称为“水席”？
洛阳水席始于唐代
已有1000多年历史
古时洛阳少雨干燥
民间膳食多用汤类
以热气腾腾抵御干燥寒冷
这就揭示了“水席”的第一个含义——
全部热菜皆有汤

样式不多可不行
唐时
水席为宫廷宴席
全席设24道菜
菜序是前八品、四镇桌、八大件、四扫尾
后传入民间

禽肉、鲜货、菌类、时蔬无不入馔

历史最久远的名宴之一

为主题

用青笋调鲤须成菜。笋为竹魂，竹为文友，文成天下之理（鲤）。
